How To Turn Christmas Leftovers Into Tortilla Creations

So it’s the day after Christmas, and you have a fridge full of left over turkey, ham, roast chicken, salads, cheeses and more. Sure you could have Christmas dinner all over again, or you could transform these left overs into something new and better: delicious tacos and quesadillas! Corn tortillas are the perfect vessel for using up your left overs, and they go perfectly with traditional Christmas dinner flavours. Turkey, Brie and Cranberry Sauce tacos anyone?

Turkey, Brie & Cranberry Sauce Taco

  1. Reheat your left over turkey and chop it into bite-sized pieces.
  2. Slice some brie (or any other left over cheeses).
  3. Reheat your corn tortillas in a hot dry frying pan until soft, hot and floppy.
  4. On each tortilla, place the turkey pieces and brie slices, then top with cranberry sauce and any left over greens like asparagus

Enjoy!

Ham, Cheese & Avocado Quesadilla

  1. Slice up any leftover ham and cheese you have. Cut an avocado into thin slices.
  2. Heat a frying pan (no oil) over low to medium heat.
  3. Place a corn tortilla in the pan, and top with the cheese, ham and avocado.
  4. Place another tortilla on top and leave in the pan to melt, flipping after a few minutes.
  5. Remove from the pan, cut in half or quarters to serve.

Turkey, Brie & Cranberry Sauce Quesadilla

  1. Reheat your left over turkey and chop it into bite-sized pieces.
  2. Slice some brie (or any other left over cheeses).

  4. Place a corn tortilla in the pan, and top with the brie, turkey and some cranberry sauce.
  5. Place another tortilla on top and leave in the pan to melt, flipping after a few minutes.
  6. Remove from the pan, cut in half or quarters to serve.

Chicken, Pea & Gravy Taco

  1. Reheat your left over chicken, peas and gravy.
  2. Shred the chicken.
  3. Reheat your corn tortillas in a hot dry frying pan until soft, hot and floppy.
  4. On each tortilla, place some shredded chicken, peas and pour the gravy over the top.
